During the canvassing period for your equipment, the first thing you need to check is the type of dishwashing machine—whether it is a high-temperature (high temp) or a low-temperature (low temp) washer. Whilst both machines use the typical detergent and rinsing materials, they operate differently.
A high-temp commercial dishwasher washes the dishes at around 65 to 70 degrees. It does the rinsing at 80 to 85 degrees Celsius, performing sanitation through the sheer heat of the water.
Whilst this machine requires you to add a condensate hood that adds to the overall cost of the device, you will get wares that dry quickly and do not need chemical sanitisers that may be harmful to your customers.
Low-temp washers use water with around 50 to 60 degrees Celsius, which is not hot enough to perform temperature sanitation. This means you need to add sanitation agents to your water. Whilst this is cheaper upfront because of the lack of need for the condenser hood, using a sanitiser agent can harm some of your more sensitive dishwares.
- Conveyor Dishwasher
If you have a mammoth operation at your hands, a typical commercial level washer won’t work. A big, bulky machine, such as a conveyor dishwasher, can take care of the level of operation, which can clean between 350 to 1000 racks of dishes a day.
This is more than enough to take care of a busy restaurant, hospital or a food court’s entire wash wares. Like any industrial machine, this is easily programmable to ensure that the materials are cleaned up to standards.
